Thank for watching! These pancakes are so light and fluffy, and so tasty too. It's also gluten and wheat free (yes, buckwheat is both of these things!) - and great for a low carb diet or a diabetic. You could even use almond or coconut flour in place of the flour too - so many options! Or try cottage cheese instead of the ricotta (if you can't find it) - but I think the ricotta is a much nicer flavor in these pancakes. Perfect for breakfast or late tea after a big meal
