This is hands down the best vegetable soup recipe we've ever made. It's rich, flavorful and worthy of an entire meal. If you want it spicy, a dash of Tobasco or your favorite hot sauce is a perfect finishing touch. Don't be turned off by the 45g of carbohydrates, it's packed with fiber!4 tablespoons olive oil
2 cups chopped leeks, white part only (from approximately 3 medium leeks)
4 cloves finely minced garlic

2 cups carrots, peeled and chopped into rounds (approximately 2 medium)
