Cranberry Cooler with Stevia
Anyone who reads my blog knows that I am not a fan of artificial anything. I use butter, not margarine, and sugar in lieu of Splenda. When I discovered Stevia, a natural sweetener, I was excited to add abandoned beverages back to my diet. In this recipe, I use unsweetened cranberry juice, not cranberry juice cocktail. It is delightfully tart. And best of all, there's only 4 grams of carbohydrates per serving.1/4 cup pure, unsweetened cranberry juice3/4 cup club soda or sparkling

Cherry Cheesecake Tapioca Pudding
It's that time of year again when fresh cherries are widely available and at the lowest prices of the season. My family loves them and I can't have too many recipes that highlight their juicy goodness. This is an old-fashioned one that reminds me of my childhood. Our housekeeper, Melvina, didn't make many desserts when cooking for my seven brothers and sisters, although on a rare occasion she'd make creamy tapioca to our great delight. Normally, tapioca pudding is made with milk, but this recipe

Can an Eight Week Extreme Diet Cure Type 2 Diabetes?
Scientists in the UK, at Newcastle University, have found that Type 2 Diabetes can be cured by diet alone. In a small study, eleven people cut their food intake to just 600 calories( equivalent to two bowls of cereal) a day for 2 months. And, 90 days later, seven people or 64% of the dieters , no longer had any symptoms of Type 2 Diabetes.
"To have people free of diabetes after years with the condition is remarkable – and all because of an eight-week diet," said

Fast Weight Loss Diets Can Cure Diabetes Type Two
I have never advocated for a rapid weight loss diet but it seems that a very low calorie diet could reverse a form of diabetes. But to promote a HUGE cup of soda ( I realize it could be a "diet soda") is not very P.R. smart.

Question of the Week- "Diabetes & Fruits - Which Fruits are High in Sugar?"
The following question was emailed to me by a reader for discussion on this week's blog post, "I was diagnosed as having pre-diabetes earlier this year. Since then I have completely changed my eating habits and become a vegetarian. I’ve lost weight but want to lose more. Can you tell me which fruits have a high sugar content? I am wondering about apples, raisins, bananas, and strawberries. I already know I need to avoid orange juice. Thanks for your help!"
Diabetes Friendly Red Sangria
A couple months ago, I posted a great recipe in my Simply Cooking blog for white sangria. But sometimes you're in the mood for red! This recipe is a great way to enjoy yourself on a hot summer's day, but will keep your blood sugars in normal range.1 bottle inexpensive, red Spanish wine1 orange, sliced1 lemon, sliced1 peach, pitted and sliced1/4 cup Cointreau, or orange liquor 2 packets, Stevia, Splenda, or artificial sweetener of your choice1/2 liter diet 7-UpCombine all ingredients
Making Olive Oil Part of Your Meals Cuts Your Stroke Risk 41%
Olive oil is again in the news with researchers focusing this time on the connection between this oil and strokes. The study shows that the benefit of making olive oil part of our menus is connected to its high amount of monounsaturated fat in the form of oleic acid and to its antioxidants. This is probably one of the reasons why people who follow a [...]

Beefy Green Beans and Potatoes
Beefy Green Beans and Potatoes 20 minutes Bob Evans restaurant inspired this meal. The flavor of the green beans and potatoes in the beef gravy exemplifies down-home cooking. This is a lot like a stew, but we substitute low-calorie green beans for the starchy carrots and peas. Ingredients 2 (14.5-ounce) cans whole green beans 2 (15-ounce) cans sliced new potatoes 1 (7-ounce) can sliced mushrooms, stems and pieces 11/2 tablespoons minced garlic 2 (12-ounce) cans roast b

Something Worse Than A Low (Hypo)
Hypoglycemic (Low Blood Sugar) Incident
Just last week I was up in the middle of the night with a 48 mg/dl (low or hypo) and headed for the pantry. During the next 20 minutes I came up with the idea for this post when two things collided. These two things are what I would call the “Perfect Storm” with diabetes. It’s actually not the first time this has happened to me and I’m sure it won’t be the last. In the diabetes community, they will probably say that a

Pasta Night
Tonight’s dinner was some Nature’s Promise whole wheat pasta with eggplant and a bit of four cheese sauce. Typically I try to stay away from pasta because of how it impacts my blood sugar, but sometimes it’s just a nice treat. I go for the whole grain and usually organic versions to try and be extra healthy. The image below is my base layer of pasta that will be underneath the eggplant. To me this seems like a good amount of pasta and isn’t like Magg
