Portion Size Me: 10 Days Of Healthy & Affordable Dinners: Day #1

We call this chicken divan. We boiled a whole chicken (which is less expensive than purchasing select chicken parts) in a big stock pot. After it cooled we deboned it and the meat became the first layer of the dish. The next layer was brown rice, followed by fresh broccoli and fresh green beans.
