When we eat, most foods are converted into glucose (blood sugar). The feature of carbohydrates however, is that they produce higher levels of sugar in the blood than other groups of foods.
But because not all carbohydrates behave the same way when it comes to raising blood sugar, by being selective, we can include them in our meals and have a balance diet that contributes all the nutrients our body needs.
